Apart from porridge I currently make all Owen’s food from scratch. I am still only just making small batches as he is not allowed big portions yet (and as our freezer is starting to fill up with all sorts of purées and I cannot fit more in to it!). Luckily Sweden has extremely strict requirements on baby food in the shop. I can basically buy anything in the baby food aisle knowing that it will be good for him. HOWEVER, making it yourself is so much more fun, saves you loads of money and gives you the peace of mind knowing exactly what is in the food.
One of the clear favourites so far has been a recipe of a lentils, mince and paprika casserole which I found on the Swedish website minimat.se, I just tweeked it a little bit to get a smaller batch.
Recipe: Casserole with lentils, mince and paprika
150-200 g lean mince
1/2 red paprika
1/2 crushed garlic clove
2 dl (2/3 cup) red lentils
400 g chopped tomatoes
300 ml water
1/2 small tin of sliced mushrooms
Chop the leek and paprika. Peel and chop the carrot into small chunks. Fry the mince with the leek for a couple of minutes in a pan. Add all remaining ingredients and let it simmer on low heat until it has thickened, approx 20-25 minutes. Use a hand blender to get a smooth purée.
