I made one of my favourite chicken dishes last night, simple chicken curry with rice. I also thought it would be a great opportunity for Owen to try something new so of course I had to make a baby version for him. Rice, chicken and curry – all new flavours! Looks like it’s his new favourite too! Babies need a little bit of extra fat so I am trying very hard to remember to add 1 tsp of oil to his portions (I use rapeseed oil).
Recipe: Chicken curry
(makes 4 “grown up” portions + a couple of baby portions)
1 yellow onion
1 red paprika
2 chicken filets
500 ml creme fraiche
100 ml water
1 tbsp curry powder
1 chicken stock cube (not for the baby!)
Chop the onion and paprika. Cut the chicken into small bits. Fry the onion and paprika for a few minutes before adding the chicken. Fry until the chicken is cooked through and then add the creme fraiche, water and curry powder. Let this simmer for a few minutes before moving 1/5 of it to a seperate pan for the baby version.
Finish the baby version by adding 25 g of rice and let it simmer on low heat with lid on until the rice is cooked. Blend to a smooth purée.
Finish the adult version by adding 1 chicken stock cube and let simmer for a few minutes. Serve with rice.
