Baby food: Roasted Aubergine Purée

Poor little Owen has been fighting a cold lately and has been a bit picky with his food. So today I made a new purée for him in hope that it would make him a bit more interested in food again. This purée turned out really nice (I ended up eating half of it myself).

Recipe: Roasted aubergine purée

2 aubergines

3-4 potatoes

1 garlic clove

Creme fraiche

Cut the aubergines in half. Peel and chop the potatoes into small bits and peel the garlic clove. Put everything in a large oven dish and drizzle a little bit of oil on top. Cook in the oven at 200ºC for 30 minutes or until everything is cooked through and soft. Let it cool down before you peel the skin of the aubergine. Blend the aubergine, potato and garlic with a hand blender and add a couple of table spoons creme fraiche to get a creamy purée.
