Owen has been eating a lot of fish and meat so this weekend I have been focusing on stocking up on vegetable purées instead. I made the aubergine purée yesterday which turned out great. Today he is having a simpler “mushy peas”-kind of purée but with broccoli for extra iron and sweet corn for extra flavour.
Recipe: Mushy peas
125 g frozen peas
125 g frozen broccoli
75 g frozen sweet corn
Put everything in a pan and add just enough water to cover the vegetables. Simmer for about 3-5 minutes until cooked through. Pour out the water and blend to a smooth purée. The broccoli can be a bit tricky to blend so make sure there are no lumps left.
